This is a small sample of some of the dishes in my repertoire. Classical, French based cuisine with some international influences, in a 3 course format. Exact menu depending on preference & seasonality can be tailored bespoke to suit.

Crayfish raviolo with sauce nantua & creamed leeks
Roast & poached foie gras, coco beans, smoked bacon & Sauternes
Twice baked soufflé of aged Comte with sauce fondue & walnuts
Tartare of venison & oysters with seaweed & dill

Main courses:
Braised onglet of beef ‘Raclette’
Duck a l’Orange with Boulanger potatoes & endive
Roast halibut, with choucroute & sauce lie de vin
Veal a la Africaine
Butter stuffed leeks with marjoram & baguette crumbs

Tulip of strawberries with Tahitian vanilla & rose de Provence
Malted milk bavarois with poached pear, Frangelico & lime
Palm sugar rice pudding with Mango & Kalamansi lime
