Noodles with Mushrooms & Pak Choi 1tsp honey 75ml dark soy sauce 200g pack chestnut mushrooms, sliced 300g pack egg noodles 200g pack pak choi, sliced lengthways, dark freen and light green separated 1 bunch spring onions 15g sesame seeds 1.) Pour the soy sauce into a small saucepan and place over a medium-high heat to reduce, this will be what you finish the dish with. Ensure that the soy sauce doesn't burn 2.) slice the mushrooms, pak choi and spring onion. separate the light green parts of the pak choi and the dark green part of the spring onions. 3.) heat oil in a frying pan and add the mushrooms, and cook for 2-3 minutes before adding the dark green part of the pak choi. be careful when seasoning as the soy sauce reduction will add a lot of salt. 4.) while this is cooking, add the noodles to a pan of boiling water and cook as per the instructions on the packet. 5.) Now add the lighter green part of the pak choi to the pan and cook for 2 minutes before adding the noodles and then the soy sauce reduction. 6.) toss togethher and serve with the green leaves of the spring onion and the sesame seeds
