Recipe: Thai Green Curry With Courgettes & Aubergine

Instructions:

Sautee shallots, garlic and lemongrass. Stir in the curry paste, sugar, lime leaves and then the coconut milk. Once boiling add diced vegetables. After 15min simmering check the seasoning and finish with thai basil and bean sprouts. Serve with rice. serves 6

  • aubergine : 1 g
  • broccoli : 100 g
  • caster sugar : 10 g
  • coconut milk : 800 ml
  • courgette : 200 g
  • lemongrass : 1 package
  • lime : 2 whole
  • shallots : 100 g
  • sweet potato : 200 g
  • vegetable stock cube : 1 g
  • beansprouts : 100 g
  • kaffir lime leaves : 6 package
  • thai green curry paste : 100 g
