Recipe: Steak With Truffled Mushroom Sauce

Instructions:

Sweat down chopped shallots with butter in a sauce pan over gentle heat. Turn the heat up and deglaze with wine, reduce right down and add 300ml chicken stock. reduce by 1/2. Add cream and simmer for about ten minutes until thick enough. Finish with truffle oil. Cook the steak to desired temperature and serve with sauce on the side. serves 6

  • beef fillet : 1200 g
  • button mushrooms : 250 g
  • chicken stock cube : 1 piece
  • double cream : 90 ml
  • majoram : 5 spice
  • shallots : 100 g
  • small white wine : 150 ml
  • unsalted butter : 30 g
  • white truffle oil : 10 ml
  • garlic clove : 4 g
