Recipe: Peanut Satay Sweet Potato Curry

Instructions:

Sautee onions, add garlic and ginger then stir in curry paste and peanut butter. Add coconut milk and diced sweet potatoes, cook until soft. Finish with spinach and a splash of lime juice. Top with peanuts. serves 6

  • coconut milk : 400 ml
  • fresh ginger : 20 g
  • lime : 1 whole
  • onion : 1 piece
  • peanuts : 50 g
  • smooth peanut butter : 10 g
  • spinach : 200 g
  • sweet potato : 600 g
  • thai red curry paste : 5 g
  • garlic clove : 2 g
