Recipe: Pav Bhaji (Spiced Indian Potato & Cauliflower Mash On Brioche Buns)

Instructions:

Chop cauliflower, carrots, potato and green beans into 1cm chunks. Boil them all together with peas for about 10 min or until extremely soft. Melt butter in a wide bottomed pan then add cumin seeds, fry for a min then add chopped onion and sautee until golden. Add ginger-garlic then chopped green chilli. Stir for 30sec then add chopped tomatoes. Add 1-2 tbsp of water and cook of gently until very soft. Add green pepper very finely chopped and sautee 3 min. Mix all the spices and stir them in. Add the boiled vegetables and , roughly mash the mixture and stir in some water. It should resemble a runny mash. In a pan, melt some butter and add a bit of the spice blend from earlier. Use this to toast the buns. Serve Pav bhaji piping hot with buns on the side. Garnish with a few peas and a knob of butter. serves 6

  • peas : 150 g
  • garam masala : 8 spice
  • ground cardamom : 2 spice
  • ground coriander : 4 spice
  • ground fenugreek : 2 spice
  • onion : 1 piece
  • potatoes : 350 g
  • unsalted butter : 100 g
