Recipe: Pasta Cacio E Pepe

Instructions:

Bring 3 litres of water to the boil in a tall stock pot with 4 tsp of salt. Only when the water is rolling boiling, drop your spaghetti or bucatini in it and cook for 7 minutes( read package). In the meantime heat up 1 tbsp of oil with 1 clove of garlic, butter and one or two tsp of ground black pepper. Fry for a couple of minutes then add one ladle of the water where your pasta are cooking. Drain the cooked pasta and mix it with your sauce making sure it is piping hot. Finish with grated parmesan or pecorino.

  • black peppercorns : 5 g
  • extra virgin olive oil : 50 ml
  • parmesan : 100 g
  • spaghetti : 600 g
  • unsalted butter : 80 g
  • garlic clove : 2 g
