Recipe: Lebanese Inspired Cheese Rolls

Instructions:

In a food processor, combine feta and provolone (or Edam) cheeses, parsley, oregano and black pepper . Pulse ingredients for a few seconds. Dilute flour with some water to make a thick yet runny glue. Cut the pastry into 20x20cm squares. Double up two sheets brushing some glue in between and rotate the square by 45 degrees. Place a line (about 10cm x 1.5cm) of cheese filling right in the centre. Brush the edges of the square with the flour glue. Fold the left and right corner first, then the one closer to you and finally roll it in a shape of a cigar. Deep fry until golden. Makes 18 rolls Serves 6

  • fresh parsley : 5 g
  • plain flour : 50 g
  • vegetable oil : 1000 ml
  • provolone : 300 g
  • feta cheese : 300 g
