Recipe: Burrata Caponata Crostini

Instructions:

Caponata Ingredients 10ml olive oil 1 aubergine 1 onion 4 garlic cloves 4 tomatoes 3 tbsp red wine vinegar 2 tbsp capers 20g black olives olives 10g fresh basil 1 Burrata cheese 10g parsley Bread 2 sour dough Equipment: Large pot 1 frying pan Recipe Description: In a large pot, heat the onions and cook until tender then add aubergine , tomatoes, garlic, olives, capers, basil and vinegar and cook for 10 minutes or till soft Cut sour horizontally, brush with olive oil and grill until slightly charred Spoon caponata onto the sour dough and add a generous spoonful of burrata on top. Garnish with fresh parsley

  • sourdough : 800 g
  • large vine tomatoes : 375 g
  • brown onion : 120 g
  • garlic clove : 24 g
