Born in Bilbao, Basque Country, Spain, Chef Jose likes to say that he has been cooking forever. It began as a way of helping his mother in the kitchen as a child and it was pure passion, that also gave him a dream to pursue. This dream led him to the top restaurants in all over the world, where he learned to hone his skills. He worked in Madrid (Gaztelupe), Bilbao (Casa Vasca), South France (Argi Eder in Espelette) and Mexico (Puerto Escondido, restaurant “Junto al Mar”). Once in London in Drones of Pond Street and Café de Paris, and finally in Quayside restaurant in Tower Hill. From the year 2000 onwards, Chef Txema took on Head Chef/ Chef Manager roles designing menus for large events such as at the Royal Ascot, Twickenham Rugby and heading groups of chefs. As he moved ahead in his career, he took on consultant roles in restaurants reviewing their menus and also began teaching cookery to adults and children both. He worked as Chef Manager at the Silverhill School for 10 long years. A diehard foodie, his enthusiasm and passion for cooking and the chef life are evident when you chance a conversation with him. After a fast-paced lifestyle in the kitchens for over 30 years, Chef Txema is looking forward to a comfortable life of catering to private dining clients, as meeting people and sharing his food is something he would like to continue forever, having been cooking 'since forever' as he puts it.
