My style of cooking is quite eclectic and often comprises of flavours from South East Asia, Jamaica and West Africa with a touch of Mediterranean fusion.
Although I am of the mindset that some dishes need to be left alone and traditional methods stay intact, there is so much room for individual expression when it comes to ingredients.
Pairing flavours that on paper sound like they would not go together is like being in a science lab. Taking an underrated vegetable and transforming its elements whilst retaining the flavour is the inspiration behind many of my dishes ….
