Ignacio started his cooking career working in renowned restaurants in Malaga, serving demanding locals, authentic Spanish cuisine in humble surroundings. Here he learnt an appreciation for the Spanish flavour palette and built his technical cooking ability. Wanting to build on his passion for Italian cooking, he moved to Naples to learn homemade Italian comfort food working in restaurants and local eateries. In London Ignacio’s passion for Italian cuisine led him to Pasta Evangelist where he experiments with new and bold flavour profiles.
