He draws inspiration from all over the world, particularly the variety and quality of British produce, to create unique and delicious dishes such as his signature roast fillet of monkfish stuffed with wild garlic, served on a crayfish and Pernod risotto, and noisettes of lamb with lamb kidney and onion potato cake, summer vegetable, and tomato broth. Edward resides in Hammersmith, where he takes advantage of the local independent butchers, fishmongers, and markets to source fresh produce for his dishes.
