I was born in Beirut, Lebanon and attended a French school. My upbringing was heavily influenced by French history, art and culture. On leaving school I studied Architecture before moving to London in 2016. I have always been interested in cooking and my passion for French food felt compromised after becoming vegan.
I found there was a lack of imagination in French vegan cuisine due to its notoriously non-vegan recipes and so I began developing my own dishes. My ambition was to create a vegan menu with substance and originality and, with this dream in mind, I enrolled at Le Cordon Bleu. Here, I completed a plant-based culinary arts diploma where I learned traditional French cuisine techniques and went on to complete a diploma in Wine, Gastronomy and Management.
Métropolitain began with the food but has evolved into a community that aims to bring people together, to celebrate diversity, art and culture, whilst inspiring intrigue with creative and fun vegan cuisine.
