In fact, the first time he did it, it was by pure chance. While living in Dubai, he often hosted dinner parties for friends at his apartment. The food was always high-end, fine-dining inspired\u2014just something he loved doing for the people around him. One week, those same friends invited him on a yacht trip. The hired chef didn\u2019t turn up.<\/p>\n<\/div>\n\n<div class=\"core-block -paragraph\">\n<p><em>\u201cThey said, \u2018Stefan, you\u2019re a fantastic cook\u2014why don\u2019t you just do it?\u2019 I said, sure, I\u2019ll give it a go. I cooked for 12 people on that yacht. They loved it.\u201d<\/em><\/p>\n<\/div>\n\n<div class=\"core-block -paragraph\">\n<p>So much so that a guest asked if he\u2019d chef on another yacht the following week. He agreed\u2014and then another booking followed. What started as a one-off became a full-time path.<\/p>\n<\/div>\n\n<div class=\"core-block -paragraph\">\n<p><em>\u201cI just kept doing it through word of mouth. I guess I fell into being a private chef by accident.\u201d<\/em><\/p>\n<\/div>\n\n<div class=\"core-block -heading\">\n<h2 class=\"wp-block-heading\" id=\"h-from-gm-to-self-taught-chef\"><strong>From GM to Self-Taught Chef<\/strong><\/h2>\n<\/div>\n\n<div class=\"core-block -paragraph\">\n<p>Stefan didn\u2019t come through the traditional chef route. Most of his early career was spent in front-of-house roles. He was the general manager at Fallowfields, a Michelin-starred hotel and restaurant in Oxfordshire. But before that, at just 15, he worked as a pot-washer in a small restaurant. One hectic service, the chef didn\u2019t have time to plate dishes himself\u2014so he taught Stefan how to do it.<\/p>\n<\/div>\n\n<div class=\"core-block -paragraph\">\n<p><em>\u201cIt was just me and him in the kitchen. He started showing me how to plate food beautifully. I think that\u2019s when it first clicked\u2014how food could look like art.\u201d<\/em><\/p>\n<\/div>\n\n<div class=\"core-block -paragraph\">\n<p>Over the last five years, Stefan has taught himself the rest. He\u2019s now known for refined British and European cuisine with global influences, and a particular strength in seafood. And despite having cooked for VIPs and celebrities, he\u2019s still pushing himself. He recently took a hands-on dessert course and is preparing to attend Le Cordon Bleu London.<\/p>\n<\/div>\n\n<div class=\"core-block -paragraph\">\n<p><em>\u201cI\u2019ve cooked for five years, for big names\u2014but I still feel there\u2019s so much to learn. I\u2019ve never liked desserts, so I never focused on them. Now I am. That\u2019s how you grow.\u201d<\/em><\/p>\n<\/div>\n\n<div class=\"core-block -heading\">\n<h2 class=\"wp-block-heading\" id=\"h-cooking-in-dubai-spain-and-the-uk-what-shifts\"><strong>Cooking in Dubai, Spain, and the UK: What Shifts<\/strong><\/h2>\n<\/div>\n\n<div class=\"core-block -paragraph\">\n<p>Having worked across three very different private dining markets\u2014Dubai, Spain, and the UK\u2014Stefan has observed how expectations and priorities shift.<\/p>\n<\/div>\n\n<div class=\"core-block -list\">\n<ul class=\"wp-block-list\"><div class=\"core-block -list-item\">\n<li><strong>In the UK<\/strong>, guests are very focused on value for money. <em>\u201cPeople want to feel they got their money\u2019s worth\u2014so the experience has to be flawless. It\u2019s not about extravagance, but about exceeding expectations.\u201d<\/em><em><br><\/em><\/li>\n<\/div>\n\n<div class=\"core-block -list-item\">\n<li><strong>In Spain<\/strong>, authenticity is everything. <em>\u201cYou can\u2019t improvise too much. If you\u2019re making a traditional Spanish dish, they expect it exactly the way their grandmother would\u2019ve made it. No shortcuts.\u201d<\/em><em><br><\/em><\/li>\n<\/div>\n\n<div class=\"core-block -list-item\">\n<li><strong>In Dubai<\/strong>, the pressure is different. <em>\u201cThey don\u2019t worry about cost\u2014but it has to be an experience. Instagrammable, theatrical, memorable. I once served gold-plated chocolate spheres that melted in golden syrup. You wouldn\u2019t serve that in the UK\u2014but it\u2019s perfect for Dubai.\u201d<\/em><em><br><\/em><\/li>\n<\/div><\/ul>\n<\/div>\n\n<div class=\"core-block -paragraph\">\n<p>Of all three, Dubai has been his favourite to work in\u2014mainly because of how creatively open the clients are. But he sees the <strong>UK market as the one to watch<\/strong>.<\/p>\n<\/div>\n\n<div class=\"core-block -paragraph\">\n<p><em>\u201cThis summer could be the biggest yet for private dining in the UK. The market\u2019s not even halfway to where it could be.\u201d<\/em><\/p>\n<\/div>\n\n<div class=\"core-block -heading\">\n<h2 class=\"wp-block-heading\" id=\"h-personal-touches-that-build-a-brand\"><strong>Personal Touches That Build a Brand<\/strong><\/h2>\n<\/div>\n\n<div class=\"core-block -paragraph\">\n<p>Stefan doesn\u2019t just show up and cook. He makes sure every guest feels like the experience was designed around them. For him, the emotional detail is what turns a good evening into a lasting memory.<\/p>\n<\/div>\n\n<div class=\"core-block -paragraph\">\n<p><em>\u201cI always try to learn about the client before the event. Sometimes I\u2019ll do a video call with them, just to get a feel.\u201d<\/em><\/p>\n<\/div>\n\n<div class=\"core-block -paragraph\">\n<p>And from that, he builds personal touches into the evening:<\/p>\n<\/div>\n\n<div class=\"core-block -list\">\n<ul class=\"wp-block-list\"><div class=\"core-block -list-item\">\n<li>For a Polish host, he brought a bottle of rare vodka\u2014sourced directly from Poland\u2014that couldn\u2019t be found in UK shops.<br><\/li>\n<\/div>\n\n<div class=\"core-block -list-item\">\n<li>For others, he\u2019s made custom gifts or table mats featuring their hometown or special memory.<br><\/li>\n<\/div><\/ul>\n<\/div>\n\n<div class=\"core-block -paragraph\">\n<p><em>\u201cAnyone can write a guest\u2019s name on a <\/em><a href=\"https:\/\/yhangry.com\/booking\/set-menu\/from-the-garden\" target=\"_blank\" rel=\"noreferrer noopener nofollow\"><em>menu<\/em><\/a><em>. I want to give them something they haven\u2019t seen in years. That\u2019s what they\u2019ll tell their friends about.\u201d<\/em><\/p>\n<\/div>\n\n<div class=\"core-block -paragraph\">\n<p>That\u2019s also how Stefan builds his business. He doesn\u2019t run ads. His bookings come almost entirely through word of mouth, Instagram, and <a href=\"https:\/\/yhangry.com\/s\/private-chef-jobs\/uk\" target=\"_blank\" rel=\"noreferrer noopener nofollow\">return clients<\/a>\u2014and no two <a href=\"https:\/\/yhangry.com\/booking\/set-menu\/signature-taster\" target=\"_blank\" rel=\"noreferrer noopener nofollow\">menus <\/a>are the same.<\/p>\n<\/div>\n\n<div class=\"core-block -paragraph\">\n<p><em>\u201cRepeat clients never get the same food twice. The storytelling is part of it\u2014someone will say, \u2018This chef did something amazing for us,\u2019 and that\u2019s what gets me <\/em><a href=\"https:\/\/yhangry.com\/booking\/chef-register\/\" target=\"_blank\" rel=\"noreferrer noopener nofollow\"><em>the next client<\/em><\/a><em>.\u201d<\/em><\/p>\n<\/div>\n\n<div class=\"core-block -paragraph\">\n<p>His seafood menus\u2014rooted in his years living by the coast in Spain\u2014are still his proudest work.<\/p>\n<\/div>\n\n<div class=\"core-block -paragraph\">\n<p><em>\u201cThere\u2019s nothing better than going to the fish market in the morning and choosing fish that\u2019s still alive. That\u2019s when the craft really comes alive.\u201d<\/em><\/p>\n<\/div>\n\n<div class=\"core-block -heading\">\n<h2 class=\"wp-block-heading\" id=\"h-honest-advice-for-chefs-breaking-in\"><strong>Honest Advice for Chefs Breaking In<\/strong><\/h2>\n<\/div>\n\n<div class=\"core-block -paragraph\">\n<p>Many chefs Stefan meets hesitate to enter <a href=\"https:\/\/yhangry.com\/blog-fine-dining-at-home\/\" target=\"_blank\" rel=\"noreferrer noopener nofollow\">private dining<\/a>\u2014not because they lack skill, but because they lack confidence. He hears it often: they\u2019re nervous about high-end gigs, VIP clients, or cooking alone without a brigade.<\/p>\n<\/div>\n\n<div class=\"core-block -paragraph\">\n<p><em>\u201cYou\u2019ve got to remember\u2014clients are just people. If you act unsure, they\u2019ll notice. But if you focus, prep well, and stay calm, they\u2019ll trust you.\u201d<\/em><\/p>\n<\/div>\n\n<div class=\"core-block -paragraph\">\n<p>He cooked for <strong>Dynamo the magician<\/strong> simply because they bumped into each other on the street in London and struck up a conversation.<\/p>\n<\/div>\n\n<div class=\"core-block -paragraph\">\n<p><em>\u201cThat could\u2019ve been anyone. There\u2019s no rule that says your first booking can\u2019t be a celebrity. If you know what you\u2019re doing, it doesn\u2019t matter.\u201d<\/em><\/p>\n<\/div>\n\n<div class=\"core-block -paragraph\">\n<p>For chefs considering the switch, Stefan shares these grounded tips:<\/p>\n<\/div>\n\n<div class=\"core-block -list\">\n<ul class=\"wp-block-list\"><div class=\"core-block -list-item\">\n<li><strong>Know your style.<\/strong> <em>\u201cDon\u2019t try to do everything. I don\u2019t do <\/em><a href=\"https:\/\/yhangry.com\/f\/private-chefs\/japanese\/\"><em>Japanese <\/em><\/a><em>or Mexican. I stick to what I\u2019m great at\u2014<\/em><a href=\"https:\/\/yhangry.com\/f\/private-chefs\/british\/\"><em>British<\/em><\/a><em>, French, Mediterranean\u2014and let others specialise in their areas.\u201d<\/em><em><br><\/em><\/li>\n<\/div>\n\n<div class=\"core-block -list-item\">\n<li><strong>Build a story.<\/strong> <em>\u201cPeople want to know why you cook what you cook. If it\u2019s based on where you grew up or who taught you, use that in your branding.\u201d<\/em><em><br><\/em><\/li>\n<\/div>\n\n<div class=\"core-block -list-item\">\n<li><strong>Create content.<\/strong> <em>\u201cStart small. I bought a camera that films just my hands cooking. I post to TikTok. Even something simple\u2014like chopping an onion\u2014builds presence.\u201d<\/em><em><br><\/em><\/li>\n<\/div>\n\n<div class=\"core-block -list-item\">\n<li><strong>Ask for feedback.<\/strong> <em>\u201cI test my new dishes on chefs at the restaurant where I work. I cook, they taste, they tell me what to improve. That\u2019s how I get better.\u201d<\/em><em><br><\/em><\/li>\n<\/div><\/ul>\n<\/div>\n\n<div class=\"core-block -paragraph\">\n<p>He also highlights <strong>Yhangry\u2019s role in building confidence and community<\/strong>.<\/p>\n<\/div>\n\n<div class=\"core-block -paragraph\">\n<p><em>\u201cWhat I like most about Yhangry is the network. It\u2019s almost like a mentorship platform if you use it that way.\u201d<\/em><\/p>\n<\/div>\n\n<div class=\"core-block -heading\">\n<h2 class=\"wp-block-heading\" id=\"h-looking-ahead\"><strong>Looking Ahead<\/strong><\/h2>\n<\/div>\n\n<div class=\"core-block -paragraph\">\n<p>Next on Stefan\u2019s path: a formal culinary foundation at <a href=\"https:\/\/www.cordonbleu.edu\/home\/en\">Le Cordon Bleu<\/a>, followed by the launch of two long-term projects\u2014a recipe book and a marketing guide for private chefs. And eventually, he sees himself cooking globally\u2014country to country, client to client\u2014designing his life around movement and creativity.<\/p>\n<\/div>\n\n<div class=\"core-block -paragraph\">\n<p><em>\u201cI want to create a travelling career.
