From Cruise Ships to Client Homes<\/strong><\/h2>\n<\/div>\n\n

Chef Jason<\/a>\u2019s culinary career spans over 30 years, starting with a formal Hotel Chefs Diploma from Bournemouth and Poole College. He worked his way through some of the UK\u2019s most respected kitchens\u2014Gravetye Manor, Chewton Glen, Rue St. Jacques in London\u2014and even cooked at Hotel de Pyrenees in France. He\u2019s also spent time on cruise ships, balancing consistency with creativity while feeding hundreds.<\/p>\n<\/div>\n\n

Around 2010 or 2011, Jason began picking up private dining work through word of mouth. At first, these were small-scale dinner parties and informal gatherings, but he soon realised it offered something traditional kitchens didn\u2019t: direct connection with the people he was cooking for. “It kind of just fell into place,”<\/em> he recalls. He gradually moved into event-based work\u2014weddings, cookery demos, and corporate team-building sessions\u2014where he developed a keen sense for service and interaction.<\/p>\n<\/div>\n\n

Learning to Own the Whole Experience<\/strong><\/h2>\n<\/div>\n\n

That shift was more than just changing the setting. It meant redefining his role entirely. “You\u2019re responsible for the entire experience\u2014from the first message to the final plate.”<\/em><\/p>\n<\/div>\n\n

Jason quickly learned that in private dining<\/a>, food is only half the job. The other half is communication, hosting, adaptability, and knowing when to step forward\u2014or step back. From the moment a client reaches out, Jason focuses on being clear, responsive, and friendly. “If you say you\u2019re using beef fillet, you use beef fillet. That kind of follow-through builds trust.”<\/em><\/p>\n<\/div>\n\n

He prepares thoroughly before each event and walks in confident, but always stays flexible. “You never know what you\u2019re stepping into. Some people want you to entertain. Some just want to be left alone.”<\/em> Reading the room is now part of his process\u2014subtle but essential.<\/p>\n<\/div>\n\n

One of his favourite events was a 40th birthday dinner where he received a round of applause\u2014including from the children at the table. “That kind of feedback makes it all worth it,”<\/em> he says. At other times, clients have asked him to sit down and share dessert or a glass of wine. These moments, Jason says, reveal the deeper value of what private chefs can offer: a genuine connection.<\/p>\n<\/div>\n\n

The First-Time Client Challenge<\/strong><\/h2>\n<\/div>\n\n

Jason knows that first-time clients can be anxious\u2014especially those booking a private chef<\/a> for the first time. He sees his job as easing that tension early. “They\u2019re wondering how good the food will be. Chefs worry about delivering. It starts with open, honest communication.”<\/em><\/p>\n<\/div>\n\n
