Chef Keiko<\/a>\u2019s culinary path is anchored in heritage. She has always turned to Japanese cuisine not just for flavour, but identity. \u201cI can cook other dishes, but as a foreigner in this country, I directed it to my culture.\u201d<\/em><\/p>\n<\/div>\n\n

Rather than stretch herself thin across trends, Keiko focused deeply. \u201cYou have to be confident. I don\u2019t feel right cooking Spanish or Italian. I know <\/em>Japanese food<\/em><\/a>\u2014I\u2019ve tasted it all my life. I know what I\u2019m doing.\u201d<\/em><\/p>\n<\/div>\n\n

It wasn\u2019t a bold, calculated leap\u2014it was a quiet one, filled with uncertainty. \u201cI didn\u2019t have any confidence,\u201d<\/em> she says. \u201cBut I started anyway. That\u2019s my motto\u2014do it anyway. If you make a mistake, you learn.\u201d<\/em><\/p>\n<\/div>\n\n

Early on, she worked tirelessly but undervalued herself. \u201cI was giving more than they paid,\u201d<\/em> she reflects. \u201cI didn\u2019t know my value back then.\u201d<\/em><\/p>\n<\/div>\n\n

She learned through action. Even after praise from guests, she often revisited the same dishes at home. \u201cSometimes I come back and think, \u2018That chicken wasn\u2019t good enough.\u2019 Even if people say it\u2019s delicious, I want to make it better.\u201d<\/em><\/p>\n<\/div>\n\n

That perfectionism extends to her events. She pays close attention to how much guests eat, what\u2019s left behind, and how quickly dishes disappear. \u201cIf two children don\u2019t eat the chicken, maybe it was the ginger. Next time, I ask about that.\u201d<\/em><\/p>\n<\/div>\n\n

A Turning Point with Yhangry<\/strong><\/h2>\n<\/div>\n\n

When Keiko joined Yhangry<\/a> in late 2020 or early 2021, everything began to shift. \u201cBefore joining, I only had maybe four bookings in a year,\u201d<\/em> she recalls. \u201cBut now I had 2 to 4 per month\u2014sometimes more.\u201d<\/em><\/p>\n<\/div>\n\n

What changed wasn\u2019t just the numbers\u2014it was the infrastructure around her. Yhangry offered steady leads, professional support, and the freedom to focus on what she does best: cooking.<\/p>\n<\/div>\n\n

\u201cThey\u2019re not like an agency just trying to make money off you,\u201d<\/em> she says. \u201cYhangry is a community. They support us. If I ask something, they reply within five hours. It feels personal.\u201d<\/em><\/p>\n<\/div>\n\n

Refining Her Craft with Creative Freedom<\/strong><\/h2>\n<\/div>\n\n

Keiko doesn\u2019t chase attention, but her creativity shines in subtle, thoughtful ways. She sticks to tradition, yet introduces modern elements with care\u2014always testing new ideas one or two days before an event.<\/p>\n<\/div>\n\n

One such experiment turned into a high-profile collaboration with Greggs<\/strong>, the beloved British bakery. While press coverage suggested she reached out, the opposite was true. \u201cThey approached me,\u201d<\/em> she explains.<\/p>\n<\/div>\n\n

Greggs sent over pastries and breads and asked her to explore fusion options. She developed around 15 original concepts. Eventually, the company selected five favourites and created a video series featuring her work. \u201cI realised they wanted my creations when they started filming,\u201d<\/em> she laughs.<\/p>\n<\/div>\n\n

Keiko is clear in her guidance to others who feel unready or hesitant\u2014especially women navigating a male-dominated industry.<\/p>\n<\/div>\n\n

\u201cIf you\u2019re scared, that\u2019s okay. Just try it part-time. Build your knowledge. Make one mistake, learn from it, and try again.\u201d<\/em><\/p>\n<\/div>\n\n

Looking back, she wishes she\u2019d had more tools around marketing and communication when she began. But through Yhangry and experience, she\u2019s grown into her value. \u201cIf you do nothing, nothing happens.
